We are Daniel Heath and Julie Smit—both of us are trained biologists who purchased a mixed hardwood forested farm in the early 2000’s. We started experimenting with growing mushrooms on logs in our forest and found that shiitake mushrooms grew well in the southern Quebec climate. The mycelium in the logs survived the Quebec winters and produced shiitake for up to 6 years! Ways Mills Shiitake (Agroforestry) has grown and now produces fresh shiitake for farmers markets, grocery stores, restaurants and other local produce stands. We also produce dried and smoked shiitake. With the growing interest in mycology (the study of fungi), a demand for “grow your own” shiitake led us to develop pre-inoculated 2-foot (0.61 m) mushroom logs, so folks can experience the excitement of watching their own shiitake grow from their logs and reach harvestable size in a few days.
